Creamy Turkey Soup

Creamy Turkey Soup

This is one of my favorite creamy soups. I love making this after the holidays with all the left over turkey I have in the fridge. You can use store bought chicken broth or make your own with the turkey carcass, which is my preference.

Cooking Time: 0h 30m
Servings: 5

Ingredients

  • 3 cloves garlic
  • 1 cup chopped green onion (white and green parts seperated)
  • 2 cups fresh sliced carrots
  • 1/4 cups flour
  • 5 cups chicken broth or homemade turkey broth
  • 2 cups whole milk
  • 1/2 tsp pepper
  • 2 tsp salt and more to taste
  • 3 cups chopped cooked turkey
  • 8 oune noodles or bunch of teared kale
  • 1/4 cups butter

Instructions

  1. Saute garlic, carrots, and white part of onion in butter until soft
  2. Add flour and mix well
  3. Gradually add 2 cups broth and milk, stiring constantly
  4. Stir til thickens
  5. stir in remaining chicken of turkey broth
  6. Bring to a boil and simmer until noodles or kale is ready. See noodles package for estimated times for cooking time
  7. Add green onion, stir, and serve
